I hate the idea of the customer first, because the customer doesn't know how the service he enjoys is done. Just like a steak, you only know that it is delicious, but you don't know why it is delicious; when you start to complain about why the steak is not delicious, you don't know that the chef still finishes it with the same heart, but you don't feel it. That's it.
If you want to open a restaurant, no customer will tell you that your cooking is not good, and you will not be asked what to put and what not to put. Just focus on completing your own understanding of food, just like Zoe Kate Niol's restaurant.
